Jr. Chef Baking II - Advanced Techniques
The Essex Resort & Spa is excited to present Jr. Chef Baking II: Advanced Techniques, a hands-on baking series designed for students (ages 12–15) ready to take their skills to the next level. Over six weeks, young bakers will build on foundational knowledge while exploring more advanced methods, techniques, and flavor combinations.
Guided by a professional chef instructor in our Viking classroom kitchen, students will refine their baking skills through more complex recipes and hands-on practice. Each week introduces new challenges that encourage creativity, precision, and confidence, helping students deepen their understanding of baking fundamentals while expanding their abilities.
Every class ends with students bringing home their own freshly baked creations—along with the skills and confidence to tackle more advanced baking projects in their own kitchens.

3/9/2026 - Week 1, Exploring the Effects of Key Ingredients. Starting with a basic cookie recipe, students will run a collective experiment to see how the quantity of different ingredients affect the final product.
3/16/2026 - Week 2, Lamination - Puff Pastry. Puff pastry is typically the first laminated dough learned in culinary school. Students will learn the theory behind lamination, make their own puff pastry from scratch, and used puff pastry to make a variety of sweet and savory treats.
3/23/2026 - Week 3, Crème Anglaise and Crème Brûlée. This class looks at eggs and their use in custards and sauces. By applying different proportions of ingredients and different cooking methods, students make a delicious creme anglaise sauce and creme brule custard.
3/30/2026 - Week 4, Genoise Cakes and Cake Decorating. This class looks again at eggs in a completely different application. Students will make their own egg-foam genoise cake, as well as learn key decorating techniques as they decorate a cake of their own.
4/6/2026 - Week 5, Chocolate. In this class students will explore the finicky but delicious ingredient chocolate. The class will work with chocolates in a variety of ways, from chocolate ganache to tempered chocolate. This is where it gets serious and a bit more complicated.
4/13/2026 - Week 6, Sourdough Baguette. The series culminates in students working with a sourdough starter to produce delicious sourdough baguettes. The class includes the science behind the biological sourdough culture, how to properly manage a starter, and basic bread making techniques that are applicable across many different products.

FOR HANDS ON CLASSES
ATTIRE: The Essex recommends that students wear closed-toe shoes to class and to dress appropriately for a cooking environment and have long hair tied back. Shorts, skirts, open-toed shoes, and flip flops are not allowed to be worn during any classes. The Essex will provide an apron to protect most clothing but, being a professional kitchen environment, spills do unfortunately happen.
KITCHEN SAFETY: Participants assume and accept that they will be participating in cooking activities where there is a natural element of risk of injury with kitchen appliances, equipment, knives, allergic reactions, and other participants in the class. When you reserve your cooking class you acknowledge this level of risk to yourself while participating in the activities at The Essex.

Celebrate one of Vermont’s most beloved traditions in this chef-led cooking class inspired by the flavors of maple season. As winter begins to give way to spring, local maple syrup takes center stage in dishes that balance rustic comfort with refined technique.
Guests will prepare a warm frisée salad with maple lardons, cider and maple braised chicken, and silky pommes purée before finishing with a delicate maple panna cotta. 3D Bunny Cake Decoration
Guided by your chef instructor, you will have the opportunity to decorate your own 3D bunny cake. The decorating process is divided into three steps - filling and crumb coat; smooth, finished top coat; and decorations. You will learn the techniques necessary for each step, with most of the emphasis placed on the decorating step. Guests will learn what different decorating tips are used for, and how to use them with a piping bag. This is a hands-on class; no prior experience is required. Difficulty - Easy to Moderate.

Seth Yacovone Band
Seth Yacovone Band has been a fixture of the Vermont music scene since 1995. The band started when Yacovone was 16 and evolved from a straight blues band to becoming a more open ended and rock-oriented sound. The current lineup together since 2013, consisting of Steve Hadeka, Alex Budney and Seth Yacovone have been making some of the best music of the band’s existence, becoming an improvisational, heavy blues rock trio, power charging Yacovone’s original songs. The band has released 8 albums, toured America and Italy, opened for and or shared the stage with acts such as Ray Charles, BB King, Phish, Neville Bros, Dr. John, Johnny Winter among others.

Keller Williams' Grateful Grass ft. Pappy Biondo of Cabinet
Keller's Description: "Loose interpretations of Grateful Dead songs done in a bluegrass style. Take my fascination with Grateful Dead songs and mix it together with my love of psychedelic improvisational bluegrass music and out burps this project.
If you like your Grateful Dead songs performed in their original way, or if you prefer traditional bluegrass, this is not the project for you. If you like singing along to Dead songs in that song’s normal tempo but dancing double time to the music, this is definitely your jam. A lot of people seem to dig it and I dig them for that.”
Keller’s Grateful Grass delivers anything-but-traditional bluegrass versions of Grateful Dead favorites. Grateful Grass often times has a rotating lineup and so far, has included collaborations with The Keels, Keith Moseley (SCI), Jeff Austin (Yonder Mountain String Band), Michael Kang (SCI), Reed Mathis, Bill Nershi (SCI), Allie Kral, Vince Herman (Leftover Salmon), Sam Grisman, Love Canon, The Infamous Stringdusters, The Hillbenders and more!
In 2008, the original Grateful Grass members (Keller, Jeff Austin and Keith Moseley) recorded a live performance at The Fillmore in Denver, CO. 100% of the proceeds from REX (Live at the Fillmore) went to benefit The Rex Foundation, the charitable non-profit started by the Grateful Dead.
In 2010 Grateful Grass took the stage at Delfest for the first live appearance since 2008. In 2013, Grateful Grass ft. Keller, Jeff Austin, Keith Moseley and Michael Kang reunited to benefit the Rex Foundation once again at The Fillmore in San Francisco for the event, Nightfall of Diamonds. Once again this performance was recorded and DOS was released in 2014. All proceeds continue to benefit the Rex Foundation.
