Stewart and Penelope, our two Nigerian Dwarf goats, are part of daily life at The Essex and the inspiration behind The Lazy Goat Tavern’s name. They spend their days grazing, sunbathing, and greeting guests who stop by for a visit.
Watching them move through the day shaped our idea of “lazy;” not idle but intentional. A reminder that rushing through life is not the same as experiencing it, especially when gathered around the table.
This philosophy shapes how we approach dining, where dishes are prepared with care, service moves with intention, and guests are invited to settle in, take their time, and enjoy the moment.


The Timber Room at The Lazy Goat Tavern is a private dining space for up to 18 guests, set apart from the main restaurant. It works well for private dinners, meetings, celebrations, and casual group events like birthdays or baby showers.

Greg Lang is a Vermont native and graduate of the New England Culinary Institute with over 30 years of culinary experience across the eastern United States. As Director of Culinary & Executive Chef at The Essex Resort & Spa, he leads the culinary program with a focus on farm-to-table cooking, seasonality, and Vermont’s local ingredients.
His cooking is shaped by international influences from Spain, Malaysia, and Newfoundland, bringing a broad perspective to his approach.
