Celebrate one of Vermont’s most beloved traditions in this chef-led cooking class inspired by the flavors of maple season. As winter begins to give way to spring, local maple syrup takes center stage in dishes that balance rustic comfort with refined technique.
Guests will prepare a warm frisée salad with maple lardons, cider and maple braised chicken, and silky pommes purée before finishing with a delicate maple panna cotta. Along the way, you’ll learn how maple syrup can add depth and complexity to both savory and sweet dishes while exploring classic techniques that elevate simple ingredients.
This hands-on class captures the warmth and richness of Vermont’s sugaring season—bringing together seasonal ingredients, thoughtful cooking, and the unmistakable flavor of local maple.

Cancellations
The Essex reserves the right to limit class sizes, revise any or all menus, substitute food items, cancel a class, change class time or location, and/or substitute instructors. If a class is cancelled, The Essex will contact the guests registered and arrange a credit or a refund. In case of inclement weather it is the responsibility of the guest to call for information regarding outdoor classes. Full refunds will be granted if cancellation is received 3 days or more prior to the cooking class or event. Exceptions may be made in cases of illness or flight delays.
