Kaleigh Boucher of Green Mountain Blue Cheese is bringing her award winning blue cheese to The Essex. Guests and visitors will be able to sample and learn about their delicious blue cheese in our lobby gift shop. Cheese will also be available for purchase.
Located in Highgate, Vermont, Green Mountain Blue's working dairy farm milks 200 cows twice a day and they make cheese once a week. The Boucher family has been farming for over 14 generations. Their mixed herd cows are grass and hay fed and include Guernsey, Jersey, Brown Swiss, and Holstein cows. Self-taught cheesemaker, Dawn Morin-Boucher is self-taught and has created the recipes for all three of their blue cheeses through years. She became a pioneering cheesemaker in Vermont when she started making cheese 25 years ago in 1999. Dawn is now passing down her knowledge and cheesemaking experience to her neice Kaleigh.
